The world production of citrus fruit has risen enormously, leaping from forty-five million tons a year to eighty-five million in the last 30 years. Today, the potential applications of their essential oils are growing wider, with nearly 40% of fresh produce processed for industrial purposes. Citrus: The Genus Citrus offers comprehensive coverage on all aspects of the botany, cultivation, processing industry, chemistry and uses of Citrus and its oils. It describes the different citrus species; their environmental, geographical, and historical context; and their chemical composition and properties in detail. Following a chapter on citrus juice technology, the international panel of contributors describe the stages of preparation and processing methods of the juice, from cold extraction and distillation to the use of supercritical fluids, and the chemical reactions involved. The authors also discuss by-products, quality control, world markets, and regulations in the industry, and how analytical methods, such as mass spectrometry and HPLC, are used to characterize the Citrus essential oils. Citrus: The Genus Citrus explores the current and future applications of Citrus oils, which include flavorings for alcohol, soft drinks, food, as well as fragrances for cosmetics and beauty products. Authors also discuss the therapeutic properties of these oils in traditional medicine and modern pharmaceuticals. Anyone involved in food sciences, pharmaceutical sciences, cosmetics, and plant sciences will no doubt find this volume to be of great value and interest.

While products such as bananas, pineapples, kiwifruit and citrus have long been available to consumers in temperate zones, new fruits such as lychee, longan, carambola, and mangosteen are now also entering the market. Confirmation of the health benefits of tropical and subtropical fruit may also promote consumption further. Tropical and subtropical fruits are particularly vulnerable to postharvest losses, and are also transported long distances for sale. Therefore maximising their quality postharvest is essential and there have been many recent advances in this area. Many tropical fruits are processed further into purees, juices and other value-added products, so quality optimization of processed products is also important. The books cover current state-of-the-art and emerging post-harvest and processing technologies. Volume 1 contains chapters on particular production stages and issues, whereas Volumes 2, 3 and 4 contain chapters focused on particular fruit. Chapters in Volume 2 review the factors affecting the quality of different tropical and subtropical fruits from açai to citrus fruits. Important issues relevant to each product are discussed, including means of maintaining quality and minimizing losses postharvest, recommended storage and transport conditions and processing methods, among other topics. With its distinguished editor and international team of contributors, Volume 2 of Postharvest biology and technology of tropical and subtropical fruits, along with the other volumes in the collection, will be an essential reference both for professionals involved in the postharvest handling and processing of tropical and subtropical fruits and for academics and researchers working in the area. Modern Methods of Plant Analysis When the handbook Modern Methods of Plant Analysis was first introduced in 1954 the considerations were: 1. the dependence of scientific progress in biology on the improvement of ex isting and the introduction of new methods; 2. the difficulty in finding many new analytical methods in specialized jour nals which are normally not accessible to experimental plant biologists; 3. the fact that in the methods sections of papers the description of methods is frequently so compact, or even sometimes so incomplete that it is dif ficult to reproduce experiments. These considerations still stand today. The series was highly successful, seven volumes appearing between 1956 and 1964. Since there is still today a demand for the old series, the publisher has decided to resume publication of Modern Methods of Plant Analysis. It is hoped that the New Series will be just as acceptable to those working in plant sciences and related fields as the early volumes undoubtedly were. It is difficult to single out the major reasons for success of any publication, but we believe that the methods published in the first series were up-to-date at the time and presented in a way that made description, as applied to plant material, com plete in itself with little need to consult other publications. Contribution authors have attempted to follow these guidelines in this New Series of volumes.

The germ plasm of numerous plant species, especially those of forest trees, some agricultural crops, and medicinal plants, is endangered and threatened with extinction. This depletion of germplasm pools and the shrinkage of naturally occurring genetic resources have caused international concern. Conventionally, the germplasm of plants is conserved through seeds, tubers, roots, corms, rhizomes, bulbs, cuttings, etc. However, the germ plasm of a number of trees and plantation crops (such as coconut, cocao, coffee, oil palm, rubber, mango, horse chestnut, etc. ) cannot be preserved since their seed are short-lived (recalcitrant). Likewise, germplasm of vegetatively propagated crops (such as potato and cassava) cannot be stored on a long term basis and has to be grown and multiplied periodically in nurseries and fields. The plants are thus exposed to unpredictable weather conditions and diseases, with the result that instances are known where entire genetic stocks are lost. Therefore, unconventional methods are being developed for the storage and international exchange of germplasm. For this purpose in vitro cultures have been employed, but they can only enable short-to medium term preservation; moreover, cell cultures upon repeated subculture undergo genetic erosion. In view of the recent developments in the in vitro induction of genetic variability through somaclonal variation, somatic hybridization, recombinant DNA technology, etc. , new methods need to be employed for the storage of desirable cultures. In this regard freeze preservation of cells in liquid nitrogen (-196 0q, like that of semen, enables long-term storage, theoretically, for an indefinite period of time.

The presence of contaminant flavonoids in vitamin C preparations from citrus fruits initially led Szent-Gyorgyi and his collaborators to suggest that a flavonoid compound, with biological activity for the prevention of capillary fragility, was vitamin P. Later re search, although not disproving biological activity, discontinued the use of the vitamin classification for these compounds. However, the ubiquitous distribution of flavonoids in living organisms, and the continued discovery of various activity in biological systems makes these compounds targets of wide ranging investigation. This volume is primarily based on a Symposium on Flavonoids and related com pounds held during the 212th National Meeting of the American Chemical Society held in Orlando, Florida on August 28-29, 1996 under the sponsorship of the Division of Agricul tural and Food Chemistry. While the book is not intended to be a comprehensive volume on flavonoid research, the papers provide various approaches to exploring the biological functions of flavonoids in plants and animals, their chemical modifications for enhanced activity, some analytical techniques, as well as their use in food classification. A signifi cant portion is devoted to medicinal implications of these compounds. The organizers would like to express their appreciation to Tropicana Products, Inc., Bradenton, Florida, Coca-Cola Foods Division, Plymouth, Florida and the American Chemical Society's Division of Agricultural and Food Chemistry for financial support. Of course, the book could not be produced without the authors, whose cooperation and pa tience is greatly appreciated.
